900g/5 large leeks, trimmed nutritional information
900g/5 large leeks, trimmed
80ml/juice of 1 orange nutritional information
80ml/juice of 1 orange
1g/finely grated zest of 1 orange nutritional information
1g/finely grated zest of 1 orange
Salt and pepper to taste nutritional information

Method

Simply follow our simply laid out recipe:

1) Cut the leeks into 1cm lengths.
2) Melt the butter in a wide frying pan or shallow saucepan and add the leeks. Stir to mix, then add the orange juice and salt and pepper to taste.
3) Simmer gently for 5-10 minutes until virtually all the liquid has evaporated. 
4) Gradually add the cream, stirring, then the orange zest. Bring up to a simmer and cook until cream is heated through.
5) Check seasoning and stir in a dash of lemon juice before serving.
