Method

Simply follow our simply laid out recipe:

1. Pre heat oven to 180C/350fan/gas mark 5.
2. In a large bowl, melt the butter and 200g chocolate (in a microwave) or over a pan of simmering water stirring occasionally. Allow to cool slightly.
3. Meanwhile, in a large bowl combine the flour, baking powder, cocoa and sugar.
4. Whisk together the eggs and milk and add to the dry ingredients, along with the melted chocolate mixture.
5. Beat together until thoroughly combined.
6. Pour mixture into a lightly greased muffin tin. or greased espresso cups. Makes 12.
7. Chop up remaining chocolate and sprinkle over the top.
8. Bake for about 15-20 minutes until well risen and firm to touch.
