1) Make a dip for the dim sum by mixing the rice vinegar, white sugar and chilli together in a saucepan. 2) Heat until the sugar melts then pour into a bowl to cool. 3) For the dim sum; put all of the remaining ingredients (except the wrappers) into a blender and blitz until it forms a paste. 4) Lay your wrappers out and put a teaspoonful of mixture into the middle of each one. 5) Pinch the wrappers into little parcels with wet fingers to make sure they are sealed. 6) Put into a bamboo steamer and steam over boiling water for 4–5 minutes or until filling mixture is cooked through. 7) Serve immediately with dip.
