What are the health benefits of Spinach baby?

Baby spinach is great raw in salads and as good for you as its older self. It’s a great leaf for the health of your blood, heart, brain, DNA and eyesight and has properties now shown to reduce cognitive decline - see link below

Cooking tips

Spinach contains an acid (oxalic) that inhibits the absorption of the iron and calcium contained in the leaf. However the vitamin C also contained in the leaf counters this effect, therefore cook as little as possible to maximise the vitamin C content.

If you are eating this raw always eat with some fat such as a salad dressing to enhance the absorption of the goodness which in this leaf is mainly fat soluble.
