1 handful fresh basil
1 large handful fresh coriander
2 cloves garlic, peeled
2cm ginger chunk, peeled and roughly chopped
2 green chillis, seeds removed, or leave in for more heat
1 stalk lemon grass, roughly chopped
Juice and zest of 1 lime
1 shallot or small onion, peeled and roughly chopped
1tbsp soy sauce
1/2 tsp ground cumin
1/2 tsp ground coriander
1) Add all the ingredients to a food processor, and blitz until a paste is formed (you may need to scrape down the sides a few times).
2) Store in the fridge in an air-tight container for up to 3 days.
