What are the health benefits of Low carb chicken and veg bake?

This fabulous one pot meal is great for your mental health and immune function. If you don't have panch phoran, one of the ingredients, it's made of these spices: a small pinch of each, fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed. Don't worry if you don't have them all, it will still be lovely.

Method

Simply follow our simply laid out recipe:

1) Preheat oven to 200C.
2) Arrange all the vegetables in the bottom of a baking tray.
3) Sprinkle over panch phoran and drizzle with olive oil and season.
4) Stir to coat all the veg with the oil and spices.
5) Place chicken thighs on top of the vegetables, skin side up, drizzle with the rapeseed oil and season.
6) Cook in the preheated oven for 45 mins to an hour.
7) Serve with all of the juices spooned over the top.
