Method

Simply follow our simply laid out recipe:

1) Preheat oven to 140C/fan 120C/gas 1.
2) Grease a 25cm round cake tin.
3) Line the cake tin with grease proof paper and grease this as well.
4) Whisk the eggs, sugar and olive oil until light and fluffy.
5) Sift the flour and baking powder into the bowl and mix together
6) Mix the remaining ingredients together and add to the bowl, mix well
7) Pour into the prepared cake tin and bang down a couple of times to level out.
8) Bake for 2 - 2½ hours until cooked. Check by inserting a knife in the middle if it comes out clean its cooked.
9) Once cooked remove from the oven and leave to cool in the tin.
10) Sprinkle with a little icing sugar or decorate as you choose.
