Method

Simply follow our simply laid out recipe:

1) Preheat oven to 200°C, Gas 6.
2) Rub chicken with salt. Mix together soy sauce, garlic, Tabasco and 2 tbsp of oil and brush over the chicken.
3) Put the chicken in a shallow ovenproof dish and bake for 30 minutes.
4) Meanwhile, make the sauce. Peel ginger and grate or chop finely. Heat the remaining 1 tbsp oil, add ginger and cook for 2-3 minutes. Blend a little of the tomato juice with cornflour, then stir into the remainder of juice. Add to the pan. Bring to the boil, stirring continuously until thickened. Stir in vinegar and sugar.
5) Pour the sauce over the chicken and return to the oven for 10 minutes or until the chicken is cooked.
6) Serve chicken drumsticks accompanied by boiled rice.
