8 medium chicken thighs, skinned
2 medium onions, peeled and chopped
4 cloves of garlic, minced
4 tbsp crunchy peanut butter
400g tinned chopped tomatoes
2 tsp ground cumin
1 tbsp mild curry powder
Pinch of salt
1) Make slashes in the chicken thighs. 2) Add all of the ingredients to a large saucepan, over a medium heat. 3) Stir well and bring up to a simmer. 4) Turn down to a very low simmer and cook for 1 hour or until the chicken falls off the bone, stirring occasionally to prevent sticking. 5) Serve with rice.
*You can remove all of the thighs and take the chicken off the bone, then re add before serving if you prefer.
