Method

Simply follow our simply laid out recipe:

1) Bring a large pan of salted water to the boil cook the linguine in the boiling water for 6-7 minutes.
2) Meanwhile In a frying pan cook the pancetta for 2-3 minutes, then add the leeks and cook until soft.
3) Add the soft cheese and stir until melted.
4) Drain the pasta (keeping a tablespoon of the cooking water in the pan), return the pasta to the pan and mix in the pancetta mixture.
5) Season with black pepper and serve.
