1) Peel the bananas and slice and slice in half length ways.
2) Add the oil to a frying pan over a medium heat and cook the bananas for a minute before adding the sugar and cooking for a couple of minutes more.
3) Remove from the pan and set aside.
4) Mix the lychees with the passion fruit.
5) Divide the bananas over 2 plates and top with the lychee and passion fruit mixture.
6) Pour some of the lychee syrup over the before serving, with the mint leaves sprinkled over.
