400g can chickpeas, drained and rinsed nutritional information

2 tsp cumin seeds nutritional information

100g/ 4oz goat's cheese nutritional information
100g/ 4oz goat's cheese
2 tbsp olive oil nutritional information
2 tbsp olive oil
50ml fresh orange juice nutritional information

1g/grated zest of 1 orange nutritional information
1g/grated zest of 1 orange
small bunch of oregano nutritional information

Method

Simply follow our simply laid out recipe:

1) Preheat oven to 190C/170C fan/gas 5.
2) Toss the carrots with the olive oil, cumin and orange zest in a baking tray. Top with the oregano.
3) Roast for 40 minutes or until tender, give the tray a shake halfway through the cooking time to turn the carrots.
4) Put the baking tray on the hob over a medium heat and add the chickpeas. Mix well to allow the fragrant oil to coat the chick peas and to warm them.
5) Transfer to a serving plate and serve with the goats cheese grated over.
