1) Heat the oil in a large saucepan and fry the onions, pepper and garlic over a medium heat for 5 minutes until they are soft. 2) Add the chillies, thyme and curry powder, cook for a further minute. 3) Stir in the tomatoes and cook for 2 minutes more stirring constantly so as not to stick 4) Add all of the remaining ingredients and bring to a simmer. Season to taste and cook for 10 minutes. 5) Serve with lime wedges on the side.
