Method

Simply follow our simply laid out recipe:

1) Heat a frying pan until hot, then add the all of the dry spices and toast for 1-2 minutes, shaking the pan from time to time.
2) Remove from the heat and grind to a powder using a pestle and mortar.
3) Put the spice mix into a bowl big enough to hold the rabbit loins and add the oil, garlic, coriander root and mint. Stir well to combine.
4) Add the rabbit loins to the bowl and massage into the meat.
5) Leave to marinate for at least 2 hours in the fridge.
6) Heat a frying pan over a medium high heat and cook the rabbit on both sides, about 6 – 7 minutes or until cooked to your liking.
7) Slice the rabbit loins before serving and spoon over any juices from the pan.
