Method

Simply follow our simply laid out recipe:

1) Heat the oil in a large saucepan over a medium heat and cook the onion and garlic for 5 minutes until soft.
2) Add the curry powder and fry for a couple minutes more.
3) Add the vegetables and fry for 5 more minutes on a high heat.
4) Add the lentils and the stock bring to the boil then turn down to a simmer and cook for 15 – 20 minutes until the vegetables and lentils are cooked.
5) Season to taste. Serve with the fresh coriander just folded through.
