Method

Simply follow our simply laid out recipe:

1) Finely dice the onion, carrot, potato and peppers.
2) Saute the vegetables in the olive oil over a medium heat.
3) Add the water and stock cubes.
4) Bring to the boil and add the lentils, herbs, salt and pepper.
5) Turn down to a simmer and cook for 20 minutes or until the lentils are tender.
6) Serve with slices of crusty bread and butter.
