1) Heat oven to 190°C/fan 170°C/gas 5. 2) Make a pocket in the chicken breasts and stuff each with a slice of the goat’s cheese and a sprig of thyme.
3) Wrap the chicken in the prosciutto. 4) Put chicken, onion and cherry tomatoes into an ovenproof dish.
5) Pour in the wine and add the sprigs of thyme . Season to taste. 6) Bake for 25-30 mins until the chicken is tender and golden. 7) Serve chicken, tomatoes & onion with the juices from the roasting dish & a drizzle of olive oil.
