Thought to be the most popular cheese in the world it originates from the town of Cheddar in Somerset, where it goes back more than 800 years. Traditionally made farmhouse cheddar gets harder and drier as it ages. Creamery made cheddar is tastier with the mature, extra mature or vintage cheddar's having a sweet nutty flavour and the mild cheddar a gentle creamier flavour.
