1) Preheat the oven to 200°C
2) Put the pork chops in an oven proof dish.
3) Mix the zest and juice of limes with garlic, 3 tbsp of coriander, vermouth, oil, honey and seasoning.
4) Spoon ½ of the mixture over the 'side up' in the tray of the pork chops.
5) Bake for 12 minutes, turn the chops over and spoon over the rest of the mixture, then bake for a further 12 minutes.
6) Pour off any juices and set aside.
7) Serve sprinkled with remaining coriander and juices.
