1. Simmer quinoa in double the amount of water until all the water is absorbed, about 10 mins.
2. Steam green beans until cooked to your liking about 5 to 7 minutes.
3. Add the sliced beetroot and tomatoes to the steamer for the last 2 minutes to warm through.
4. In a large bowl toss together all of the ingredients and season to taste.
5. Serve on its own as a light lunch or as a side dish.
