1) Cut the lettuces in half lengthwise. Drizzle with olive oil and season well.
2) Cook cut side down on a hot griddle pan for 3-5 minutes until the stems are just tender.
3) Place the lettuces cut side up on a baking tray and crumble the goats cheese over the top.
4) Drizzle with a little more oil and a grind of black pepper.
5) Place under a hot grill until the cheese starts to melt.
