Wow your guests with this simple starter that has loads of flavour, will keep your cells working normally and give you energy. Scallops have a lovely delicate flavour which pairs really well with the salty parma ham.

Method

Simply follow our simply laid out recipe:

1) Heat a frying pan until very hot. Add the ham and cook for 1-2 minutes each side until crisp. Set aside.
2) Season the scallops and add to the hot pan and cook for 1-2 minutes on each side until opaque.
3) To serve; smear a little tahini on each plate. Break each slice of Parma ham into smaller pieces and divide into 3 on each plate. Top each pile of ham with a scallop. Put a little rocket between each bundle then grind a little black pepper over and drizzle with olive oil.
