Method

Simply follow our simply laid out recipe:

1) Cut the haddock fillets in half and place in a high sided frying pan with the milk, bay leaves and peppercorns.
2) Bring to the boil and then put a lid on and turn the heat off.
3) Melt the butter in a saucepan over a low heat and add the onion. Fry for a few minutes to soften.
4) Add the carrot, swede and potato to the onion and fry in the pan until lightly browned.
5) Remove the haddock from the milk and set aside.
6) Strain the milk and reserve.
7) Sprinkle the flour over the vegetables and cook for a couple of minutes.
8) Pour the reserved milk over the vegetables and stir continuously to thicken a little.
9) Bring to a simmer and cook until the vegetables are soft.
10) Return the haddock to the pan to warm through.
11) Serve with the chopped parsley sprinkled over the top.
