250g broccoli cut into florets, main stem removed nutritional information
250g broccoli cut into florets, main stem removed
100g frozen petit pois nutritional information
100g frozen petit pois
3tbsp olive oil nutritional information
3tbsp olive oil
3 cloves garlic, crushed nutritional information

Juice of 1 lemon nutritional information
Juice of 1 lemon
20g vegan Parmesan, grated nutritional information
20g vegan Parmesan, grated
Salt and pepper to taste nutritional information

Method

Simply follow our simply laid out recipe:

1) Bring a large saucepan of salted water to the boil. Add the penne and cook according to the pack instructions. Drain, then drizzle with a little olive oil to stop the pasta sticking.
2) Meanwhile steam the broccoli for 5 minutes or until just tender.
3) Heat the remaining olive oil in a large non-stick frying pan, add the garlic, broccoli and petit pois and cook for 4 - 5 minutes, stirring ocassionaly.
4) Add the lemon juice and season with salt and pepper to taste.
5) Add the pasta to the broccoli pan and toss together.
6) Serve immediately topped with grated vegan parmesan.
