1) Slice the chicken thighs into fat strips and saute in the olive oil until lightly browned (10 mins or so). 2) Add the whole red chillies to the thighs after 5 minutes and saute lightly. 3) Slice the red onion and lemon and quarter the tomatoes. 4) Fill the bowls with the salad herbs and olives and top with the chicken and chillies. 5) Drizzle the extra virgin olive oil over the top and serve.
