400g/4 apples, peeled and cut into chunks
200g black pudding
1kg/4 bone in loin chops
Salt and pepper to taste
300g/1 head of spring greens, sliced thickly
1) Put the cider and 25g butter in to a saucepan, bring to a simmer, add the apples and cook until the apples are soft, approximately 10 minutes. Add more liquid if needed. 2) Season the pork chops then cook under a high grill for 4-5 minutes on each side. 3) Meanwhile cook the black pudding by melting 10g of butter in a frying pan and frying the black pudding for 3 minutes on each side turning regularly. Season well and leave to rest while the pork chops finish cooking. 4) Steam the greens for 3-4 minutes. Season. 5) Serve the pork chops with the black pudding, greens and the cider apple sauce.
