220g fillet of smoked cod nutritional information
220g fillet of smoked cod
350g cooked potatoes nutritional information
350g cooked potatoes
1 medium egg nutritional information
1 medium egg
Salt and pepper to taste nutritional information

2 tbsp extra virgin olive oil nutritional information
2 tbsp extra virgin olive oil
30g salted butter nutritional information
30g salted butter
2 tbsp double cream nutritional information
2 tbsp double cream

Method

Simply follow our simply laid out recipe:

1) Mash the leftover potato with the butter and cream, season to taste.
2) Lightly fry the cod fillet in half of the oil until it flakes easily.
3) Add the egg and the flaked cod to the potato, add a little flour if it seems too loose.
4) Heat the oil in a frying pan over a medium heat.
5) Divide the mixture into four and pour into the warmed oil. You may need to do 2 at a time depending on the size of your pan.
6) Fry lightly for 8 minutes each side or until nicely browned (keep the fish cakes moving in the oil to prevent sticking).
7) Serve with a salad of your choice. We served ours with wilted spinach and cherry tomatoes.
