48ml/4 tbsp lemon juice nutritional information

12g/2 tbsp roughly chopped flat leaf parsley nutritional information

Method

Simply follow our simply laid out recipe:

1) Lightly dust the skate wings with the flour.
2) Heat 25g butter and the oil in a large frying pan.
3) Add the skate and fry for 3-4 minutes on each side, or until cooked.
4) Remove and keep warm.
5) Add the remaining butter to the frying pan and cook until it turns a light brown.
6) Add the lemon juice, capers and parsley.
7) Serve the skate wings with the caper butter spooned over.
