Method

Simply follow our simply laid out recipe:

1) Cut meat into 2.5cm cubes and pat dry with kitchen paper.
2) Peel and crush the garlic.
3) Heat the butter in a frying pan and add the pork. Brown on all sides, turning all the time, without letting it catch on the bottom of the pan.
4) Add the cumin, garlic and a good pinch of salt and pepper, stir for a few seconds to coat the pork.
5) Stir in 120ml of the wine, bring to the boil then turn down to a simmer for 40 minutes or until the pork is cooked and tender.
6) Add the remaining wine and the lemon slices to the pan and cook, stirring, for 5 minutes.
7) Stir in the coriander and cook for 1 minute more.
