Method

Simply follow our simply laid out recipe:

1) To make the pesto, place salt, garlic, pine nuts and basil in a food processor and blend for 10 seconds. With the blades still turning, pour in the oil in a steady stream.
2) Remove from the processor and stir in the parmesan.
3) Arrange the tomatoes cut side down on a grill pan and cook under a high heat for 3 minutes, turn the tomatoes and continue to cook for a further 3-4 minutes.
4) Remove from the grill and allow to cool slightly, then top each tomato with a teaspoon of pesto.
5) Garnish with basil leaves and serve with a mixed leaf salad and Italian dressing.
