With winter on our doorstep I thought I’d share our favourite soup recipes with you.

There are times when you need some good old fashioned comfort food and a satisfying, steaming bowl of soup fits the bill perfectly.

So here goes:

This is our favourite soup of the moment so it’s up here at number 1!

Broccoli, spinach and cheddar soup



Serves: 5
Prep Time: 10 Mins
Cooking Time: 35 Mins
Allergens: Milk, Lactose, Celery, Gluten, Sulphur dioxide

Ingredients:
70g/1 stick celery, sliced
150g/1 medium potato, peeled and diced
100g Red onions, peeled and chopped
100g baby spinach
125g/1 leek, washed and sliced
160g cheddar cheese
1lt vegetable stock
350g broccoli
75g/1 medium carrot, peeled and chopped
2 tbsp rapeseed oil

I tried a version of this in Miami earlier this year and never thought I’d like it, but it’s great and everyone I’ve given the recipe to has loved it. Even Ric’s children love this, and they are only 6 and 3!

French Onion Soup



Serves: 4
Prep Time: 5 Mins
Cooking Time: 40 Mins
Allergens: Sulphur dioxide, Milk, Lactose, Gluten, Soya

Ingredients:
1g/2 bay leaves
900ml beef stock
25g butter
100g gruyère cheese
1.2kg onions sliced
30ml 2 tbsp rapeseed oil
150ml red wine
Salt and pepper to taste
2g/1 tsp dried thyme
120g/4 slices white bread
16g/2 tbsp plain flour

No soup list should be without a French onion soup and this one brings goodness for your cell health, DNA, eyes and bones
Serves: 4

Cooking Time: 30 Mins
Allergens: Gluten, Sulphur dioxide

Ingredients:

120g green/puy lentils
1 lge white onion
185g/Mediun green pepper
185g/Medium red pepper
1.5 chicken stock cubes
200g/2 Medium carrot
150g/1 medium potato
Tsp dried mixed herbs
1 litre water
2 tbsp olive oil
Salt and pepper to taste

We tried this fabulous lentil soup sent in by Helen form Norwich a week or so ago and its delicious. Plus, it will provide support for your immune system, cell and heart health.

Hungarian fisherman’s soup – Halaszle



Serves: 4
Prep Time: 20 Mins
Cooking Time: 100 Mins
Allergens: Fish

Ingredients:
2 x 800g whole perch, filleted, bones and heads reserved (ask your fishmonger to do this for you)
60ml olive oil
2 medium onions, peeled and finely chopped
240g tomatoes, peeled, finely chopped
2 tbsp Hungarian sweet paprika
I medium green pepper trimmed and finely chopped

This hearty soup will protect your cells, look after your bones and give you energy.

This Hungarian fish soup is traditionally served on Christmas eve. It can be served with bread or pasta and is always made with river fish, such as perch, trout, carp or pike.

Shurpa soup - lamb and vegetable



Serves: 4
Prep Time: 15 Mins
Cooking Time: 180 Mins

Ingredients
500g lamb stewing steak
1 large onion, sliced
1 medium carrot, peeled and can cut into small cubes
1 medium tomato, sliced
1 red pepper, cored and sliced
4 medium potatoes, peeled
1 tin chickpeas drained
½ tsp cumin seeds, crushed
Salt and black pepper to taste
1 small bunch parsley, finely chopped

Shurpa soup is a popular soup all over Asia. It’s a great hearty soup which will help reduce tiredness and fatigue and support your brain and blood health.
Serves: 1
Prep Time: 5 Mins
Cooking Time: 10 Mins
Allergens: Sulphur dioxide

Ingredients:
10g onion powder
10g parsley
120g organic frozen peas
50g organic red onion
Pinch sea salt
Pinch black pepper
20g organic sorghum flour
20ml organic sunflower oil
200ml water

An amazing soup for cancer protection, healthy sight, immune system support, healthy skin and cleansing (antioxidant) activity.

It’s not only vegan but gluten free as well. If you can’t get sorghum flour use any gluten free flour. 
Serves: 4
Prep Time: 10 Mins
Cooking Time: 35 Mins
Allergens: Mustard, Fish

Ingredients:
200g Smoked haddock fillet
200g potato, peeled and cut into chunks
100g/1 medium onion, peeled and chopped
75g / 1carrot, peeled and roughly chopped
1 garlic clove, peeled and chopped
4 Tbsp Tomato puree/paste - double concentrate
2 tsp curry powder
2tbsp vegetable oil
1 bay leaf
Salt and pepper to taste
40g sunflower seeds
1ltr vegetable stock

This lovely soup is good for growth and your immune system and may protect against cancer.

I’ve made this with frozen coley and its fabulous. I normally take the fish out and break it up, then add it back to the soup after it’s blended.
Serves: 6
Prep Time: 10 Mins
Cooking Time: 50 Mins
Allergens: Sulphur dioxide, Milk, Lactose

Ingredients:
1kg white onions, peeled and sliced
3 sprigs fresh thyme
150ml white wine
700ml chicken stock
200ml crème fraiche
70g unsalted butter
A few drops of truffle oil
Pinch of sea salt
Freshly ground black pepper

I had this in a restaurant and fell in love with it, so had to recreate it. It’s so delicious you must give it a go!

Plus, the nutrients in it may protect against cancer and will look after your immune system and cells.


Chicken soup



Serves: 8
Prep Time: 20 Mins
Cooking Time: 80 Mins
Allergens: Celery

Ingredients:
300g carrots
200g celery
1.5 kg Chicken (quartered)
300g/2 medium onions
1 tbsp of rapeseed oil

Another soup that really can’t be left off a soup list, is a great chicken soup.

There are not many ingredients here, but it does involve making your own stock for it. Hence the long cooking time. It’s worth it though for the depth of flavour you get making your own.
Serves: 4
Prep Time: 10 Mins
Cooking Time: 25 Mins
Allergens: Sulphur dioxide, Celery, Gluten

Ingredients:
2 bay leaves
70g/1 small carrot
100g/1 celery stick
100ml of cider vinegar
2 tbsp olive oil
100g/1 medium onion
Salt and pepper to taste
1kg ripe tomatoes
12g/2 tsp tomato purée
1.2 litres veg stock made up with 2 stock cubes
2tsp sugar

I know what your saying, I can get this in a can, but try making it yourself and you’ll taste the difference!
