What are the health benefits of Spanish omelette?

25g salted butter
60g mature cheddar
6 medium hens eggs
4 tbsp tomato ketchup
2 little gem lettuces
1 tbsp olive oil
1 medium/100g onions
300g peeled potatoes
Salt and pepper to taste
1) Cut the potatoes into bite sized chunks and saute with the onion in the butter and oil.
2) Mix the eggs together.
2) Once the potatoes are cooked add the mixed eggs and fry for a couple of minutes.
3) Sprinkle over the cheddar, place the omellette under the grill until golden brown.
4) Serve with the little gem lettuce and tomato ketchup.
