It’s that time of year. The nights are closing in, the leaves are falling from the trees, and thanks to Halloween we have an excess of pumpkin to eat.

So, what do you do with all that pumpkin? Unfortunately a lot of people just throw away the orange flesh they’ve carved out. Well, we’re here to help you with four fantastic pumpkin recipes. 

Oh, and just a quick note to say, obviously don’t eat any of the pumpkins used as jack-o'-lanterns. 

First up, Roasted Pumpkin Seeds

Do you just throw away the inner part of the pumpkin? Well stop! Instead, separate out the seeds, give them a good rise and then follow this recipe for a delicious nutritious Halloween snack. An average portion will give you good amounts of Phosphorus, Magnesium, Manganese and Copper.

These delicious muffins will look after your heart, bones, cells and vision because they are full of Omega 3 ALA, Phosphorous, Manganese, Vitamin A, Calcium, Riboflavin (B2) and Lutein & Zeaxanthin!
